New Year’s Eve Elm Press Wassail
(Makes 36, 5-ounce servings)
An American-type of New Year’s drink which you can enjoy anywhere which is particularly good with the frozen orange juice.
 
Juice of 2 lemons
4 Cups (1 liter) frozen orange juice*
2 cinnamon sticks
2 Tbsp whole cloves
2 Tbsp ground allspice
1 Tbsp grated nutmeg
1 Cup (2 dl) sugar
2 quarts (2 liters) apple cider
3 Cups (6 dl) rum (optional for non-alcoholic drink)
Apple rings and halved cherries for garnish

Mix and bring to a boil the first seven ingredients. Simmer for 10 minutes, then strain. Meanwhile, bring cider to a boil. Add strained ingredients and rum. Serve hot in a punch bowl and garnish with apple rings and halved cherries.

*If you cannot get frozen orange juice, use a regular orange juice. The punch will not have the same strong orange flavor.

 

Fruit Juice Wassail
Makes 16 servings
This is an alcohol-free drink which is a bit sweeter than hot, mulled wine. You can add a little of your favorite alcohol if you want to add a bit of zip to the drink. A stick of cinnamon with which to stir is decorative and adds flavor.
 
1 quart (1 liter) cranberry juice cocktail
1 quart (1 liter) pineapple juice
½ Cup sugar
1 Christmas Spice packet
 
Combine all ingredients in a 2-quart (2 liter) glass measure. Cover with vented plastic wrap. Stirring twice during cooking, microwave on high 14 minutes or until boiling. Continue to microwave on medium 5 minutes for spices to flavor wassail. Serve in
glasses for hot drinks or Christmas mugs. Note: If you want to “spice” this up a bit further, add a shot of scotch.


Fruit Tea
(4 glasses)
This is a little unusual, but nice if you like to experiment and try a new way to serve tea.
3 tea bags of fruit tea
1 Cup (2 dl) boiling water
3 Cups (6 dl) milk
1 Tbsp honey
 
For the glasses:
1 Tbsp honey
2 Tbsp grated coconut

Let the tea bags seep in the boiling water until the tea is very strong - ca. 5 minutes. Heat the milk until almost boiling and add the tea. Add honey until desired sweetness is reached.

Brush the rim of 4 glasses with honey, dip the rims in grated coconut then fill the glasses with the tea.



Chocolate Coffee

Brighten up the weekend with a little difference and serve a chocolate coffee.

3 Tbsp brown sugar
2 Tbsp cocoa (unsweetened)
1-½ Cups (3 dl) milk
1-½ Cups (3 dl) hot, strong coffee
½ Cup (1 dl) whipping cream

In a saucepan, mix the brown sugar, cocoa and warm milk and bring to a boil. Remove from heat and add the coffee. Pour into mugs and top with whipped cream and sprinkle with a little cocoa.



Glühwein


Make a Syrup by boiling for 5 minutes:
2-1/2 Cups sugar
1-1/4 Cups water
4 dozen whole cloves
6 sticks cinnamon
3 crushed nutmeg
Peel of 3 lemons
Peel of 3 oranges


Strain the syrup and add:
4 Cups hot lemon or lime juice; heat well and add 4 bottles of red wine.  
Serve very hot with slices of lemon or pineapple (German style) or mix together raisins and slivered almonds and put 1 tablespoon in the bottom of an Irish coffee glass and pour the hot Glühwein over this.  Serve with a small teaspoon so you can eat the raisins and almonds as you drink the hot wine (Danish style).



Hot Apple Wine

(Makes about 7 Cups)

3 Cups cider (or 2 Cups apple juice and 1 Cup ginger ale)
1/4 Cup sugar
3 inches stick cinnamon
6 whole cloves
Peel of 1/4 lemon, cut in strips
Bottle of dry white wine
2 Tbsp lemon juice


In a heave saucepan, combine the apple cider, sugar, cinnamon, cloves and lemon peel.  Bring to a boil, stirring until the sugar is dissolved.  Simmer uncovered for 15 minutes.  Strain to remove the spices and lemon peel. Add the wine and lemon juice.  Heat through, but do not boil. Serve in preheated mugs.

 

 

 

 

 

Malibu Toxic
Pour 4cl. Malibu in a glass with Tonic water, lemon and slices of lime.

 

 

 

Wonderful
Mix 4cl. Danzka Vodka Currant, 4cl. cranberry juice and 4cl. orange juice. Shake with crushed ice. Serve in a cocktail glass and add a few bits of lime.

 


Bacardi Cuba

Cuba LibrePut 4-6 ice cubes and 3 cl of Bacardi Cuba rum in a tall glass. Squeeze1 – 1½ limes into the glass and decorate on top. Fill with Coca-Cola.

Drambui with Fruit Juice

Fill a tall glass with ice cubes and fresh apple juice. Add 2 cl Drambuie and 6 cl apple juice.

 

 

 

 

Peach Shot
4cl. Pepino and lots of ice in a glass. Add some bits of fruit.

 

 

 

Bacardi Pinâ Colada
Mix 4cl. Bacardi rum, 4cl. coconut milk and 6cl. pineapple juice. Pour in a tall glass with lots of ice-cubes. (Add fruit.)

 

 

 

 

Gin Sling
Put ice in a glass and then add (Beefeater) gin, 3cl. lemon juice and a spot of Rose's Grenadine. Fill up the glass with mineral water and add some lemon and cocktail 'berries'.

 

 

 

 

 

 

Caipirinha

Cut  lime in small pieces squeeze the juice out. Put the fruit meat, juice, and 1 tsp. sugar  in a cocktail glass. Add ice and 2 cl vodka.

 

 

 

 

 

 

Martini Metz

Add 1 part Martini Bianco and 1 part 7-up or Sprite in a glass. Serve with lime or a slice of apple.

 

 

 

Kahlûa Cooler

Add ice in a tall glass and add 6 cl Kahlûa. Fill with ginger ale.

 

 

 

 

Hop Toad
Mix 4cl. Bacardi rum, 2cl. of Rose's Lime and 2cl. of Rose's apricot. Shake with ice and pour into a glass. Add slices of lime.

 

 

 

 

 

 

 

Beefeater Lady

Add 4 cl Beefeater, 2 cl whipped cream, 1 piece grenadine and apple juice in a shaker. Shake with ice and serve in a tall glass.

 

 

 

 

 

 

Scarlett Ice

Add 2 cl Southern Comfort and 2 cl cranberry or black current juice in a tall glass. Add lots of ice with some lime or lemon.

 

 

 

 

 

Bacardi  Lemon with Sprite/7-up.

Add 4-6 cl Bacardi in a glass. Add Sprite of 7-up and a slice of lime.

 

 

 

 

 

Horse's Neck

Place the peel of a whole orange in a glass.(Try to make sure it stays on the sides of the glass) Fill the glass with ice and add 6 cl Whisky, and ginger ale.

 

 

 

 

Orange Soufflé

 

(Serves 4)

This recipe requires few ingredients. You need to make it ahead 

of time, but it will keep and is very refreshing.

 

2 eggs

1 Cup (2 dl) low fat milk (e.g. 2 percent)

1 oranges

1 Tbsp grated orange rind

6 Tbsp orange juice

1 Tbsp sugar

2 tsp potato flour (or corn starch)

1 tsp gelatin

 

Wash the orange and cut it in half. Grate the rind of half of the 

orange to make 1 tablespoon grated orange rind and squeeze 

it to make 6 tablespoons orange juice. Use the other half of the 

orange for decoration.

Separate the eggs. In a saucepan mix the egg yolks, milk, orange 

juice and grated orange peel. Add the potato flour (or corn starch) 

and cook gently until the mixture thickens. Soften the gelatin in a 

tablespoon water and add to the mixture, stirring it in well. Pour the 

mixture into a bowl to cool.

Beat the egg whites and gently fold them into the cooled orange 

mixture. Pour the mixture into individual serving dishes or in one 

bowl and place in the refrigerator until set. Decorate with orange 

slices.

Suggestion: Use homogenized eggs if you are worried about using 

regular eggs.

 

 

New Yorker


3 cl Vodka
5 cl cranberry juice
1 cl lime juice


Pour into a tall glass, add 6-8 ice cubes and shake.  Fill
up with apple juice and add a slice of fresh lime.

Passion


1 cl strawberry juice
2 cl Campari


pour into a champagne glass, add 4-6 ice cubes, fill up
with champagne and add a candied cherry.

Elderberry Drink

2-1/2 cups (5 dl /  625 ml /20 fl oz ) Elderberry juice
2 bottles of bubbly wine Verde or Prosecco (or other
   sparkling white wine)
Club Soda
Vodka (optional)
Lime
Strawberries
Sprigs of lemon balm (or mint)


Place ice cubes in the bottom of a punch bowl.  Pour the Elderberry
juice and then the sparkling white wine.  Add club soda  to your taste
and a little vodka if desired.
Wash the lime and strawberries, quarter the strawberries and slice the
lime, add the lemon balm or mint and serve.

You may also let the fruit marinate in the elderberry juice for an hour
before adding the other ingredients.

Sangria
(Serves 20)
There are many versions of Sangria; here is another version for you
to try.

2 bottles of red wine e.g. Rioja
1-1/2 cups (3 dl / 375 ml / 12 oz) Tequila
1-1/2 cups (3 dl / 375 ml / 12 oz) Drambuie
1 orange with 8 cloves stuck into the orange
4 limes cut into thin slices
2 peaches or  nectarines halved and sliced thinly
1 pineapple, peeled, cored and cut into cubes
10 Kiwi fruits, peeled and cut into cubes
3 Sticks cinnamon


Place two large blocks of ice in the bottom of a punch bowl.
Place all ingredients in the bowl and mix well. Serve
immediately.  
Don¹t forget to serve this drink with a long spoon so the fruit
can be eaten.

Note:  You can make your own ice blocks by filling two large plastic
containers of ca. 1 quart sizes or use milk cartons which have been
thoroughly washed. Fill them with water and freeze them overnight.

 

Cuba Libre 

Put 4-6 ice cubes and 3 cl of rum in a tall glass. Squeeze  1 - 1½ 
limes into the glass and decorate on top. Fill with Coca-Cola.

 

 

 

 Calvados & Champagne

Put 3 cl Calvados in a champagne glass and fill with champagne. 

 

 

 

 

 

 

Banana Punch

 

3 bananas

1 (6 fl oz / 180 ml) frozen lemonade

1 (6 fl oz / 180 ml) can frozen orange juice

3 cups canned pineapple juice

6 cups water

 

Put 1 banana in the blender with the lemonade and 1 cup of water. Blend.

Pour into a large plastic bowl big enough to hold approximately 12-14 cups (3-3 ½ liters/ quarts) of liquid. You may use plastic ice cream containers as

This punch will be put into the freezer to become slush.

Put 1 banana in the blender with the orange juice and another cup of water. Blend. Pour into the large plastic bowl. Put the last banana in the blender with another cup of water and 1 cup pineapple Juice. Blend. Pour into the plastic bowl. Blend the remaining liquid. Mix all of the liquid well before storing in the freezer. Freeze until slushy. Serve in cocktail glasses with a straw and a demitasse spoon (teaspoon) With alcohol:

Add one cup (2 dl) of vodka for a luncheon party. Make the slush the day before as alcohol will not freeze. Stir the slush several times with a wooden spoon and lick the spoon before washing!

 

Diet Soft Drinks

Mix one capful of any flavor Tropicana Slim (or other concentrated fruit

Juice) with 1 small bottle of club soda. Serve over ice. For a non-carbonated drink, mix with plain water. A squeeze of lemon or lime juice makes a nice change.
