          Roux:

   This is a combination of equal parts of 
flour and butter or other fat. If oil is
used, the flour and oil is stirred to a smooth
consistency which can be browned in a
saucepan and added to a gumbo or other
southern dish to thicken the sauce or soup.  

 

 

 

                          
  Jambalaya

   A casserole composed of rice and meat
or seafood, vegetables and special
spices. Jambalaya is a combination of
the French "jambon" and the African 
"ye" or rice.


 

 

   Blackened Redfish:

   Redfish fried in spices is a specialty of
the Cajun kitchen. The fish is fried over an
open fire.


 

 

 

           
         Gumbo:

   This is a type of chicken or fish soup.
Okra is an essential ingredient in gumbo.
You can use a gumbo file which is a
powder with a sassafras base.

 

                         

 Cajun spices:

   Can be find under the brand name "Magic"
It is a blend of cayenne pepper, celery seeds,

 cumin, ground red pepper, mustard,  seeds, 

paprika, sage and timian
