and Butter Recipes

 | Rubs
Rubs are blends of seasonings, either fresh or
dried herbs and spices. They add flavor and tenderize meat. Add a little oil
to make a dry rub a pesto-type rub. Apply rubs to surface of uncooked meats
just before grilling.

 | Flavored Butters
Flavored butters can add a delicious accent to
grilled (barbecued) steaks or other meats. Butters may be prepared up to
three days in advance. Refrigerate covered until needed. |

Mix all ingredients in a small bowl. Let stand for 10-15 minutes and apply to meat just before grilling or barbecuing.

 | Peppery Dijon-Parsley Rub |

(Makes ¼ Cup)
¼ Cup (½ dl) freshly chopped parsley
2 Tbsp Dijon mustard
1 Tbsp crushed mixed peppercorns
2 large cloves garlic, minced
1 tsp salt |

Combine all ingredients and store in an airtight container until ready to use. Shake before using. Add a little vegetable oil if you wish to make this into a paste, apply to the meat and grill or barbecue.

 | Spicy Three-Pepper Rub |

2 tsp salt
2 tsp dried oregano
2 tsp sweet paprika
2 tsp dried thyme leaves
1 tsp garlic powder
1 tsp onion powder
1 tsp ground black pepper
1 tsp ground white pepper
½ tsp ground red pepper

Combine all ingredients in a small bowl. Stir with a fork until uniformly blended. Place a little of the butter on grilled (barbecued) meats or fish or spread on fresh, warm Italian or French bread.

 | Green Onion and Garlic Butter |

(Makes about 1/3 Cup / 2/3 dl)
¼ Cup (½ dl) soft, salted butter
2 Tbsp finely chopped green onion
1 tsp minced garlic

Combine all ingredients in a small bowl. Stir with a fork until well blended. Cover and store in the refrigerator until ready to use. Good when you place a little on grilled (barbecued) meats or fish.

 | Chipotle Chile Butter |

(Makes about ½ Cup / 1 dl)
¼ Cup (½ dl) soft, salted butter
2 Tbsp minced shallots
1 Tbsp minced fresh cilantro
1 Tbsp minced chipotle peppers (in adobo sauce)
1 tsp fresh lime juice
