Salsas and aioli have been regular accompaniments to barbecues and outdoor meals for quite some time now. Another appealing addition to a summer meal is Mojo Sauce. Translated literally, mojo is a magic spell, hex or charm. Mojo Sauces are colorful and appealing to the visual and taste senses. Mojo Sauces and Mojo Salsas comes in two basic colors, red and green. The red goes well with new potatoes, whereas the green goes well with fish. You can dip your favorite bread into a Mojo or enjoy it as an accompaniment to a barbecued meat or seafood. The cold, spicy Mojo Sauces, which can be served as dips or accompaniments to meat, fish or vegetables, originated in the Canary Islands.
It is best to grind the spices with a wooden pestle and mortal. However, a blender can also be used. Mojo Sauce has the basic ingredients of oil, vinegar, spices and herbs to which you can add cheese, nuts, meats, liver or bread. To spice up the sauce, add a little dried chili pepper, piri-piri or cayenne pepper. The sauce can be stored in the refrigerator for several days.
Mojo Sauce are very versatile, insofar as they are great with steamed vegetables, grilled fish, boiled new potatoes, pasta salad, boiled eggs or with bread as a snack, appetizer or to a main meal. Mojo is also great with small new potatoes, either cooked in boiling water seasoned with sea salt and then baked or new potatoes baked in the oven with salt and a little olive oil. A typical Canarian meal could be a fish, served with potatoes and green mojo sauce preceded by an Exotic Salad
